Another commenter said the breed,  but more  importantly, this cow is lacking (at least some) myostatin.    Myostatin regulates muscle growth.   Without it, muscles grow  a lot more  than they normally do.

We're hoping to get our kids  on a trial for a myostatin inhibitor which  could help them out a lot (they have Duchenne muscular dystrohpy)
